Stir-fried green beans with coconut and chili
INGREDIENTS
4 people
300 g green beans
1⁄2 teaspoon brown mustard seeds
1 small onion
3 cloves garlic
6-8 curry leaves
1⁄2 teaspoon ground turmeric
1 green chili
2-3 tablespoons grated coconut
Coconut oil
Juice of 1⁄2 lime
Black pepper
Salt
HOW TO DO IT
Rinse the beans thoroughly and remove the stems. Then cut them diagonally into thin slices, about 2 cm long. Peel and finely chop the onion and garlic, and cut the chilli into thin rings. Heat a wok or pan with a little coconut oil and fry the mustard seeds until they start to pop. Add the onion, garlic, curry leaves and beans and stir-fry them, stirring around in the pan to ensure even cooking. Add the turmeric, green chilli and grated coconut and season with salt, pepper and lime.
Serve as a side dish for rice & curry with rice, Sri Lankan chicken curry , beetroot curry , sweet and spicy onion sambal and dhal .
